Well I've just contacted the host. Seems I had been trying the right thing with the ENV file!
Oh that makes sense, yeah
The email there is for the host, so something must be configured differently here
I've just spotted this line further up the env file:
ADMIN_EMAIL="mailto:[email protected]|[email protected]"
I have to say I'm not up to speed on Apache / server config.
